Preparação
1. Infuse the Saffron & Warm the Broth
- Pour the vegetable stock into a saucepan over medium heat until steaming, then lower the heat to maintain a gentle simmer throughout cooking.
- Ladle 1/2 cup of the warm stock into a small bowl and crumble the saffron threads into it. Let it steep for at least 10 minutes until it turns a deep, glowing crimson-gold.
2. Make the Crispy Shallot Topping
- Heat 1/4 cup neutral oil in a small skillet over medium-low heat.
- Add the thinly sliced shallots and cook slowly, stirring frequently, until they turn uniformly golden brown and crisp (about 6 to 8 minutes).
- Remove them immediately using a slotted spoon onto a paper-towel-lined plate. Dust with a tiny pinch of fine salt; they will crisp up fully as they cool. Reserve 1 tablespoon of the fragrant shallot oil.
3. Sear the Wild Mushrooms
- Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a wide frying pan over high heat.
- Add the wild mushrooms in a single layer without crowding. Let them brown undisturbed for 3 minutes to develop deep caramelization and nutty flavor.
- Toss, season with a pinch of salt and black pepper, and sauté for another 2 to 3 minutes until tender and deeply browned. Stir in the minced garlic for the final 30 seconds, then transfer the mushrooms to a plate and keep warm.
4. Whip the High-Protein Truffle Ricotta
- In a small food processor or bowl with a whisk, beat the ricotta with a pinch of sea salt, black pepper, and a few drops of truffle oil until completely smooth, light, and airy. Set aside at room temperature.
5. Toast the Rice & Cook the Risotto
- In a heavy-bottomed Dutch oven or wide risotto pan, heat the remaining 2 tablespoons of olive oil over medium heat.
- Add the arborio rice and toast, stirring constantly, for 2 minutes until the grains are translucent around the edges and smell lightly toasted.
- Pour in the dry white wine, stirring vigorously until the alcohol scent evaporates and the liquid has almost entirely reduced.
- Pour in the steeped saffron stock, watching the rice take on a brilliant golden hue.
- Begin adding the simmering vegetable stock one ladleful at a time, stirring frequently with a wooden spoon or spatula. Allow the rice to absorb nearly all the liquid before adding the next ladle.
- Continue this gradual process for 17 to 20 minutes, until the rice is tender with a subtle, creamy bite at the center (al dente).
6. The Mantecatura (The Emulsification)
- Turn off the heat. This step is crucial for the classic silky emulsion.
- Add the remaining 2 tablespoons of cold butter and the finely grated Parmigiano-Reggiano.
- Vigorously beat the risotto with your spoon for 1 to 2 minutes, allowing the cheese and butter to melt into a glossy, undulating wave (what Italians call all'onda). Season with sea salt and freshly cracked black pepper to taste.
7. Plating
- Spoon generous pools of the golden risotto onto warm, wide, shallow bowls. Gently tap the bottom of each bowl on the counter so the rice settles flat and creamy.
- Scatter the seared wild mushrooms across the center.
- Crown each portion with a quenelle or rounded dollop of the whipped truffle ricotta.
- Finish with a scatter of the crispy shallots, minced chives or microgreens, and a light drizzle of the reserved shallot oil. Serve immediately.
