Preparação
1. Roast the Aromatics and Squash
- Preheat your oven to 200°C (400°F).
- Toss the diced butternut squash on a parchment-lined baking sheet with 1 tablespoon of cooking oil, a pinch of salt, and a pinch of black pepper. Spread the cubes in an even layer.
- Roast for 25 to 30 minutes, turning once halfway through, until tender and caramelized along the edges.
2. Prepare the High-Protein Garnish
- Thoroughly press the diced tofu dry between paper towels to remove excess moisture.
- Heat 1 tablespoon of oil in a skillet over medium-high heat. Add the diced tofu in a single layer.
- Pan-fry the tofu cubes for 7 to 9 minutes, flipping occasionally, until crisp and golden brown on all sides. Season lightly with salt and pepper, remove from heat, and set aside.
3. Build the Bisque Base
- In a large Dutch oven or heavy-bottomed stockpot, heat the remaining tablespoon of oil over medium heat.
- Add the diced onion and cook for 5 to 6 minutes until soft and translucent.
- Stir in the minced garlic and grated ginger, cooking for 1 minute until fragrant.
- Add the cumin, coriander, turmeric, and cayenne. Stir continuously for 30 seconds to bloom the spices without burning them.
- Add the roasted butternut squash, the rinsed cannellini beans (which naturally blend into a velvety texture while boosting protein), and the bruised lemongrass stalk.
- Pour in the vegetable stock and full-fat coconut milk (remember to set aside 2 tablespoons of coconut milk for plating). Stir in the maple syrup, 1 teaspoon of salt, and cracked pepper.
- Bring the liquid to a gentle boil, then lower the heat and simmer uncovered for 10 minutes to allow the flavors to marry.
4. Puree to a Velvety Finish
- Remove the pot from the heat and discard the lemongrass stalk.
- Using a high-speed immersion blender (or transferring carefully in batches to a countertop blender), blend the bisque until completely silky, creamy, and uniform.
- Return the soup to low heat. Taste and adjust the seasoning with salt, pepper, or a small squeeze of fresh lime juice to brighten the rich coconut base. If the bisque is too thick, thin with an extra splash of warm stock.
5. Plate and Serve
- Ladle the hot bisque into wide, shallow bowls.
- Drizzle the reserved coconut milk in a circular ribbon over the center of each serving.
- Crown the soup with a generous mound of golden pan-fried tofu croutons and crunchy toasted pumpkin seeds.
- Finish with fresh cracked pepper and serve immediately alongside fresh lime wedges.
